  1. 2 cups 320g / 11oz Rice

  2. 9 Green onions - chopped

  3. 1 1/2 teaspoons 7 1/2ml Paprika

  4. 1/2 teaspoon 2 1/2ml Cumin

  5. 1/4 cup 59ml Olive oil

  6. 2 Chicken broth - (14 1/2 oz ea)

  7. 1 Spam luncheon meat - (12 oz) - cut into strips

  8. 1 Frozen peas - (10 oz) - thawed, drained

  9. 1 Green bell pepper - cut 1 Red bell pepper - cut 1/4" strips

  10. 1 Sliced pepperoni - (3 1/2 oz)

  11. 1/2 cup 73g / 2.6oz Chopped fresh parsley

  1. In a 3-quart saucepan, over medium heat, cook rice, green onions, paprika and cumin in oil until onion is tender. Stir in broth. Cook over low heat 20 to 30 minutes or until rice is tender and all liquid is absorbed.

  2. Meanwhile, in a skillet over medium heat, saute Spam 4 to 5 minutes. Combine rice mixture, Spam, peas, bell pepper, pepperoni and parsley.

  3. This recipe yields 10 servings.
