  2. SPRING PITA SANDWICHES

  6. 2 Pita breads

  7. 2 Tomatoes, diced

  8. 1 Avocado, sliced

  9. 1 c Kidney beans, canned/drained

  10. 1 c Cheddar cheese, grated

  11. 1 c Mushrooms, sliced

  12. 1 c Alfalfa sprouts

  13. 1/2 c Canola Oil

  14. 4 tb Vinegar

  15. 1/4 c Roasted cashews

  16. Salt & Pepper to taste

  17. Slice pitas in half and fill with remaining

  18. ingredients, dividing evenly. Fillings will be

  19. overflowing. Simply separate the pita halves and pile

  20. up what's left between them. Add oil and vinegar and top with cashews. These sandwiches are colorful,

  21. delicious, nutritious, easy to make, and perfect for picnics, too.

  22. (Note: Even my meat-eating friends and relatives seem

  23. to enjoy this when served as a main dish.)
