  1. 1 can Chicken of the Sea® Medium Shrimp

  2. 1 can Chicken of the Sea® Fancy Crabmeat

  3. 1 can Chicken of the Sea® Minced Clams

  4. 1 (5-oz.) package rice mix with red beans and rice

  5. 1 1/2 cups fat free milk

  6. 1 cup fat free sour cream

  7. 2 cups grated low-fat pepper jack or Monterey Jack cheese

  8. 1 Tablespoon Caribbean Jerk seasoning

  9. 1 (15-oz.) can whole kernel corn, drained

  10. 1 (4-oz.) can diced mild green chiles

  11. 1 Tablespoon fresh squeezed lime juice Chopped Italian parsley

  1. In a large saucepan, cook rice according to package directions. Meanwhile, in large bowl, whisk together milk and sour cream until well blended. Gently fold in Chicken of the Seareg; Crabmeat, Chicken of the Sea® Minced Clams and Chicken of the Sea® Shrimp , pepper jack cheese and jerk seasoning. During the last 5 minutes of cooking the rice gently stir in seafood mixture. Heat until cheese melts, but do not boil. Stir in corn, chilies and lime juice. Serve immediately and garnish with chopped parsley. Makes approximately 2 quarts (about 8 1-cup servings).
