  3. 1 pound sweet Italian sausage

  4. 3 red peppers, halved and seeded

  5. 3 yellow peppers, halved and seeded

  6. 2 large yellow onions, halved

  7. 3 tablespoons olive oil, divided

  1. Preparation : Preparation : Prepare a charcoal or wood fire and allow it to burn down to embers. Grill the sausages until well browned, crusty and cooked through, approximately15 to 20 minutes. While the sausage is cooking, rub the peppers and onions with 2 tablespoons ofthe olive oil and grill until just cooked through. Remove and slice into thinstrips. Slice the rolls in half and brush with the remaining olive oil. Placecut-side-down on the grill and grill for 20 to 30 seconds, or until lightlybrowned. Slice the sausages into 1-inch pieces on the bias and place a few pieces of thehot and sweet sausage on the rolls and top with the pepper and onions.
