  1. Elderflower Fritters

  2. 20 Elderflower heads

  3. 1 egg

  4. 4 oz flour

  5. 1 tablespoon water

  6. 1 tablespoon oil

  7. pinch salt

  8. grated lemon zest

  9. lemon juice, maple syrup or sugar and cinnamon to taste

  10. oil for deep-frying

  11. Separate the egg. Blend the egg yolk with the oil, water, lemon

  12. zest and juice until smooth. Add the mix to the sifted flour. Add

  13. more liquid if necessary to make a thick batter. Allow the mix to

  14. rest for 1/2 hour. Beat the eggwhite stiff and gently fold it into the batter. Dip each flower head into the batter and deep-fry until

  15. golden-brown. Drain and serve with maple syrup or a blend of cinnamon

  16. and sugar.
