  1. 500g chicken (diced)

  2. 2 tbsp cornflour

  3. 1 tsp salt

  4. 1 1/2 handful of walnuts (break in half)

  5. Sesame oil

  6. Soy sauce

  1. Dice the chicken and put in a small plastic bag with the cornflour and salt. Shake the bag to coat the chicken with the flour mixture.

  2. Heat sesame oil in a pan on a high heat and fry the chicken until lightly golden.

  3. Add the walnuts and fry until lightly cripsy. Take care to not burn the walnuts. You can add soy sauce to the dish to caramalise the walnuts or keep it as it is.

  4. Serve with rice and your choice of asian vegetable. I prefer to use sliced cucumber on the side.
