  1. 8 cups torn fresh spinach

  2. 1 1/2 cups sliced fresh mushrooms

  3. 1/4 cup sliced green onions

  4. 2 slices turkey bacon, chopped

  5. 1 cup orange juice

  6. 2 teaspoons cornstarch

  7. 1/2 teaspoon grated orange peel

  8. 1/8 teaspoon garlic salt

  9. 1/8 teaspoon ground black pepper

  10. 3 oranges, peeled, halved, and sliced

  11. 1/2 orange or red bell pepper, cut into thin strips

  1. In a large salad bowl, combine spinach, mushrooms, and green onions; set aside.

  2. In a large skillet, cook bacon over medium heat until crisp. Remove bacon; drain on paper towels. Set aside.

  3. Wipe out skillet. In a medium bowl, combine orange juice, cornstarch, orange peel, garlic salt, and black pepper; add to skillet. Cook and stir until thickened and bubbly; about 2 minutes.

  4. Add hot dressing to spinach mixture. Toss until coated and slightly wilted. Add bacon, oranges, and pepper strips. Serve immediately.
