  1. Turmeric and Almond Chicken

  2. 2 tsp vegetable oil

  3. 1 medium onion, finely diced

  4. 1 small handful sultanas, coarsely chopped

  5. 2 tsp ground coriander

  6. 2 tsp ground cummin

  7. ground chilli (to taste)

  8. 1 chicken breast, chopped into small pieces

  9. 1 cup water

  10. 1/2 cup ground almonds

  11. 2 tsp turmeric

  12. 2 tblsp fish sauce

  13. Over medium heat, saute the onions and sultanas in vegetable oil until the onions are translucent. Add coriander, cummin and chilli and toss through the onions until the fragrance of the spices is released. Add the chicken breast, water, ground almonds and turmeric

  14. and stir well. Reduce to a simmer, add fish sauce and cook until chicken is cooked through and sauce thickens.

  15. Serve over rice with steamed vegetables.
