  1. 2 cups all-purpose flour

  2. 1/2 cup packed brown sugar

  3. 1 tablespoon baking powder

  4. 1/2 teaspoon ground cinnamon

  5. 1/2 teaspoon baking soda

  6. 1/4 teaspoon ground cloves

  7. 2 eggs, beaten

  8. 1 cup prepared mincemeat

  9. 1/3 cup applesauce

  10. 1/3 cup apple juice

  11. 3 tablespoons butter, melted LEMON SAUCE:

  12. 1 cup sugar

  13. 3 tablespoons cornstarch

  14. 2 cups water

  15. 1/4 cup butter

  16. 1 tablespoon grated lemon peel

  17. 2 teaspoons lemon juice

  1. In a bowl, combine the first six ingredients. Combine eggs, mincemeat, applesauce, juice and butter; stir into dry ingredients. Pour into a greased 8-cup fluted tube pan. Bake at 350 degrees F for 35-40 minutes or until cake tests done. Cool for 10 minutes; remove from pan to a wire rack to cool completely. For sauce, combine sugar and cornstarch in a saucepan. Stir in water until smooth. Bring to a boil; cook and stir for 2 minutes. Remove from the heat; stir in butter until melted. Add lemon peel and juice. Serve warm with the cake. ');
