  1. 3 slice(s) bacon , cut into 1/2-inch pieces

  2. 3 green onions , thinly sliced

  3. 1/3 cup(s) cider vinegar or red wine vinegar

  4. 1 tablespoon(s) olive oil

  5. 1 tablespoon(s) grainy Dijon mustard

  6. 2 tablespoon(s) fresh thyme leaves

  7. 1/2 teaspoon(s) salt

  8. 3 cup(s) (about 15 ounces) skinless rotisserie chicken meat , coarsely shredded

  9. 1 Red Delicious, Gala, or Fuji apple , unpeeled, cored, and thinly sliced

  10. 1 bag(s) (5 to 6 ounces) baby spinach

  1. In nonstick 10-inch skillet, cook bacon over medium heat 5 to 6 minutes or until browned, stirring occasionally. Add green onions and cook 1 minute, stirring. Remove skillet from heat. Stir in vinegar, oil, mustard, thyme, and salt.

  2. Meanwhile, in large serving bowl, toss chicken with apple and spinach until combined.

  3. Pour hot dressing over chicken mixture. Toss until salad is evenly coated. Serve immediately.
