  1. MOSTACCIOLI VEGETABLE SALAD

  2. 2 cups uncooked mostaccioli

  3. 2 cups broccoli florets

  4. 1 cup cauliflower florets

  5. 1 cups sliced mushrooms

  6. 1 cup sliced carrots

  7. 1 cup halved cherry tomatoes

  8. 1 small red onion, thinly sliced and separated into rings

  9. 1/4 cup reduced-fat Italian dressing

  10. 2 tablespoons grated Parmesan cheese

  11. Cook pasta, drain and rinse with cold water. In a large bowl,

  12. combine all ingredients except cheese, toss gently. Cover and refrigerate 2-3 hours. Toss gently before serving, sprinkle with

  13. Parmesan cheese. Makes 14 servings.
