  1. 1 pound boneless pork sirloin chops, cut 1/2 inch thick 2 tablespoons all-purpose flour

  2. 1/2 teaspoon salt

  3. 1/2 teaspoon black pepper

  4. 2 tablespoons olive oil

  5. 1 pound winter squash (such as butternut or banana), peeled, seeded, and cut into 1-inch cubes (2 cups)

  6. 1 medium onion, cut into thin wedges

  7. 1 tablespoon snipped fresh oregano or 1 teaspoon dried oregano, crushed

  8. 1/4 cup chicken broth

  9. 1/4 cup orange juice

  10. 2 medium zucchini, quartered lengthwise and cut into 1-inch pieces (about 2 1/2 cups)

  1. Method : Trim fat from pork; if necessary; cut pork into four serving-size portions. Sprinkle both sides of each portion with flour, salt, and pepper. In a large skillet heat olive oil over medium-high heat. Brown pork in hot oil for 4 minutes, turning once. Add winter squash and onion; sprinkle with dried oregano, if using. Pour chicken broth and orange juice over vegetables and meat. Bring to boiling; reduce heat. Cover and simmer for 10 minutes. Add zucchini. Cover and cook about 5 minutes more or until pork is tender and no longer pink. Transfer pork to a serving platter. Stir fresh oregano, if using, into vegetables. Serve vegetables with pork.
