  2. 2 whole onion -- chopped

  3. 2 cloves garlic -- minced

  4. 1 whole green pepper -- chopped

  5. 3 stalks celery -- chopped

  6. 6 cups fish stock or bouillon

  7. 2 29 oz cans tomato sauce

  8. 1 whole bay leaf

  9. 1 tablespoon fresh oregano -- (or 1tsp. dried)

  10. 2 whole dried red peppers -- crumbled

  11. (or a pinch of cayenne)

  12. 2 whole potatoes -- diced

  13. 4 whole carrot -- sliced

  14. 2 cups fresh or frozen corn kernels

  15. 1 pound crab meat

  16. 1/2 cup italian parsley -- chopped

  17. freshly ground black pepper

  1. Cook the onions, garlic, green pepper and celery in 1/2 cup of the stock to soften, 5-10 minutes.

  2. Add the remaining stock, tomato sauce, bay leaf, oregano, red peppers, potatoes and carrots and cook 20 minutes, or until the vegetables are tender.

  3. Stir in the corn, crabmeat and parsley and simmer 5 minutes.

  4. Serve with ground pepper to taste.
