  1. 2 Tbs butter

  2. 1 pkg. chicken flavored rice-a-roni (you can also use beef flavored)

  3. 1 1/2 Cups water

  4. 1 can diced tomatoes (I use the kind with onions and garlic in them)

  5. 1/2 Cup salsa (fresh made works best)

  6. 1 can corn drained

  7. 1 can black bean s drained

  8. 1 package cooked italian sausage sliced (I usually use about 4 full links)

  9. 1/2 to 1 lb peeled uncooked shrimp

  1. In large skillet, brown rice in butter. Increase heat and stir in water, tomatoes, salsa and season packet. Bring to boil and then simmer on low for 15 minutes. Stir in corn, beans and sausage and then cook 5 more minutes until all liquid is absorbed. Coat the shrimp in Olive Oil and season with garlic salt, paprika and cayenne pepper (be careful with the pepper, it is hot!) Cook in skillet until pink. Layer shrimp on top of rice mixture and serve.
