  1. 1 c strong cold expresso coffee

  2. 1 package Italian ladyfingers (Savoiardi)

  3. 3 egg yolks

  4. 5 T sugar

  5. 8 oz mascarpone cheese

  6. 1 T brandy or cognac liquor 1 c heavy whipping cream

  7. 1 T unsweetened cocoa powder

  1. In a mixing bowl, whisk egg yolks and sugar until frothy

  2. Add macarpone cheese and liquor and blend until smooth

  3. In another mixing bowl, whip cream until stiff and fold into the mascarpone mixture until well blended and smooth

  4. Pour the cold coffee into a dish and dip the ladyfingers very quickly into the coffee and line the bottom of a 11x7x1.5 oblong dish with the ladyfingers

  5. Spread half of the mascarpone mixture over the ladyfingers

  6. Dip the remaining ladyfingers quickly into the coffee and arrange another layer of ladyfingers and spread the remaining mascarpone mixture

  7. Cover with plastic wrap and chill at least six hours

  8. When ready to serve, sprinkle cocoa powder through a fine sieve over the entire surface of the tiramisu

  9. Cut square portions onto individual dessert plates
