  1. 2 lbs. firm-fleshed white fish (cod, haddock or halibut), cut in large chunks

  2. Salt

  3. 2 onions, sliced

  4. 2 TbsWesson Oil

  5. 1 6-oz. can Tomato Paste

  6. 3 cups water

  7. 1/2 tsp. each; red pepper and black pepper

  8. 1 cup finely chopped parsley

  9. 1/3 cup dry white wine

  10. 6 slices of Italian bread (toasted, if desired)

  11. Makes 6 servings

  1. Method :

  2. Sprinkle fish with 1/2 tsp. salt; let stand 1 hour.

  3. Meanwhile, lightly brown onion in hot oil; drain. Stir in water, Tomato Paste, red pepper, black pepper, 1 1/2 tsps. salt, parsley and wine. Simmer 20 minutes.

  4. Add fish, simmer about 10 minutes longer or just until fish flakes easily with a fork.

  5. To serve, place a slice of bread in each soup bowl; ladle soup over.
