  8. 2 pounds goat meat

  9. 1/2 cup onions -- sliced

  10. 1 stalk scallion

  11. 2 cloves garlic -- finely chopped

  12. 1 tablespoon salt

  13. 1 tablespoon black pepper

  14. 2 1/2 tablespoons curry powder

  15. 1 hot peppers -- fin

  16. 2 tablespoons oil

  17. 1 teaspoon lime juice

  18. 6 cups boiling water

  19. 1/2 cup coconut milk

  20. 2 ounces butter

  21. 1 teaspoon sugar

  22. 1 sprig thyme

  23. Wash goat meat and cut in pieces, sprinkle with salt and pepper. Add

  24. curry, scalion, onion, garlic and hot pepper. Work these into the meat.

  25. Cover, let stand for 1 1/2 hours.

  26. Heat the oil. Add meat and seasonings, sprinkle lime juice over. Fry

  27. lightly for five minutes, stirring. Add 4 cups boiling water, and simmer,

  28. covered, 2-3 hours until meat is tender, stirring from time to time. Add

  29. water as needed. Add coconut milk, margarine, sugar and thyme. Cook for five minutes more.

  30. Server accompanied by plain white rice, roti, chutney, sliced beets, grated

  31. coconut, raisins, ripe banana and slice sweet peppers. - - - - - - - - - - - - - - - - - -
