  1. 4 boneless skinless chicken fillets

  2. 1/3 cup tequila

  3. 1/2 cup orange liqueur

  4. 3/4 cup fresh lime juice

  5. 3 large cloves garlic peeled

  6. 4 tablespoons olive oil

  7. 3 medium tomatoes diced

  8. 1 medium white onion chopped

  9. 1 small jalapenos seeded and minced

  10. 4 tablespoons chopped fresh cilantro

  11. 1 pinch white sugar

  12. 1 teaspoon salt

  13. 1 tablespoon olive oil

  14. 2 teaspoons freshly ground black pepper

  1. Place chicken in shallow baking dish.

  2. In bowl stir together tequila, orange liqueur, limejuice, salt, garlic and olive oil.

  3. Pour mixture over fillets and rub in and cover and refrigerate 1/2 hour turning fillets once.

  4. Preheat grill for high heat.

  5. In medium bowl toss together tomatoes, onion, jalapeno, cilantro, sugar and salt then set aside.

  6. Remove fillets from marinade and pat dry then brush with oil and sprinkle with pepper.

  7. In a small saucepan boil remaining marinade for several minutes then remove from heat.

  8. Strain out garlic cloves then set aside to cool.

  9. Grill chicken 5 minutes per side then transfer to serving dish.

  10. Spoon salsa over chicken and drizzle with cooked marinade to serve.
