  1. 1 (9 inch) baked pastry pie shell or graham cracker crumb crust

  2. 3 eggs, separated

  3. 1 (14 oz.) can Eagle Brand sweetened condensed milk

  4. 1/2 c. Real Lime juice concentrate

  5. Few drops green food coloring

  6. 1/2 tsp. cream of tartar

  7. 1/3 c. sugar

  1. Preheat oven to 350 degrees. In medium bowl, beat egg yolks, stir in sweetened condensed milk, Real Lime juice, and food coloring, if desired. Pour into prepared pastry shell.

  2. In small mixer bowl, beat egg whites with cream of tartar until soft peaks form, gradually add sugar, beating until stiff but not dry. Spread on top of pie, sealing carefully to edge of shell. Bake 12 to 15 minutes or until golden brown. Cool. Chill 3 hours or until set. Refrigerate leftovers.
