  1. 2 Tbs olive oil

  2. 1 Tbs each finely chopped fresh oregano , sage and/or rosemary

  3. 2 cloves garlic ,peeled and finely chopped

  4. 1/8 tsp red pepper flakes

  5. 1 bone-in pork loin roast (about 5 lbs)

  1. Heat oven to 450. In small bowl, combine olive oil,oregano,sage,rosemary,garlic and red pepper flakes;stir till blended. Season with 1 tsp salt,if desired.

  2. Rub herb-garlic mixture evenly over entire surface of pork loin. Place pork bone side down in roasting pan. Roast 10 mins.

  3. Reduce oven temperature to 300 degrees. Roast 1-1/2 hours or till thermometer inserted in meat reads 165. Let sit 10 mins before slicing.
