  1. 3 larges Potatoes, thinly sliced (1 to 1 1/2 lbs)

  2. 6 ounces Cooked chicken, shredded or diced

  3. cup Picante sauce

  4. 3 tablespoons Diced onions

  5. cup Grated lowfat cheddar cheese

  6. cup Grated Monterey Jack cheese

  7. cup Sliced ripe olives

  8. cup Sliced jalapeno peppers

  1. A low-fat alternative to nachos.

  2. Here are two recipes I picked up in the Health Zone at AOL. The chocolate shakes are great, but I haven't tried the nacho/vachos yet.

  3. Boil potato slices for 3-5 minutes or until slightly tender. Drain and arrange on an oven-safe serving platter, overlapping slices. Combine chicken, picante sauce and onions in a small bowl; spoon this mixture over potatoes. Sprinkle with cheese, olives and jalapenos. Broil 4-6" from heat until cheese is melted.
