  1. 2 cups fresh raspberries or thawed and drained frozen raspberries

  2. 1/4 cup sugar

  3. 1/4 cup raspberry juice or orange juice

  4. 2 tbsp fresh lemon juice

  5. 2 tbsp Chambord raspberry liquor

  1. Place berries, sugar, raspberry or orange juice, and lemon juice in blender and puree until very smooth.

  2. Strain through a fine-mesh colander or sieve into a glass bowl, pressing mixture to extract the juice.

  3. Stir in Chambord; taste and adjust the sugar to taste.

  4. Keep coulis at room temperature.
