  2. ZESTY GREEN SPLIT PEAS

  7. 2 c Green split peas -- uncooked

  8. 8 c -Water

  9. 2 Bay leaves

  10. 1/2 ts Ground tumeric

  11. 1 t Salt

  12. 2 tb Canola oil -- (I used 2 Tsp)

  13. 2 ts Ginger -- peeled & minced

  14. 2 ts Jalapenos -- seeded & chopped

  15. 4 tb Black mustard seeds -- ground*

  16. 3 tb -Water

  17. 3 oz Coconut, shredded sweetened

  18. 1 pn Soy margarine

  19. --FOR GARNISH--

  20. Cilantro, chopped

  21. *If black mustard seeds are not available, use 1 Tbs

  22. dry mustard.

  23. Mix ground mustard powder in with water and allow to

  24. sit for 30 minutes.

  25. Bring split peas and water to a boil. Lower heat to

  26. medium. Add bay leaves and tumeric (I forgot the

  27. tumeric--was good anyway). Simmer, covered, until peas

  28. 40 to 45 minutes.

  30. simmering, uncover occasionally and stir, adding a Tbs

  31. or so of hot water if the mixture sticks to the bottom

  32. of the pan. When cooked, remove and discard bay

  33. leaves. Add salt and keep warm. Heat oil in a small,

  34. 6-inch skillet over medium-low heat. Saute ginger root

  35. 1 to

  36. minutes. Add mustard paste and cook for another

  37. minute, stirring constantly. Add coconut and stir

  38. several times. Remove from heat. Pour over the pea mixture and stir. (I had to drain my peas, because I

  39. still had lots of water in mine.) Let stand covered

  40. for 15 minutes. Add a dab of soy margarine if desired

  41. and garnish with cilantro. (I didn't use the cilantro)

  42. I think this would make a good filling for pita

  43. pockets. I didn't think the peas were "zesty" enough,

  44. so I sprinkled hot pepper vinegar on mine.
