  1. 2 tablespoons Vegetable oil

  2. 1 Egg

  3. 2 cups Cooked rice

  4. cup Cooked potato, cubed

  5. cup Fried beancurd, cubed

  6. Onion, sliced

  7. 1 tablespoon Dried shrimp, ground

  8. tablespoon Blachan

  9. 1 cup Bean shoots

  10. 1 Spring onion, chopped

  11. A little shredded lettuce

  12. 1 tablespoon Fried shallots

  1. Heat oil and lightly scramble egg, then add rice, potato, beancurd and onion.

  2. Stir fry over high heat for a minute or two, then add shrimp and blachan. Keep stirring.

  3. Toss in bean shoots and spring onion, and stir fry for a few minutes. Keep frying over high heat until rice feels dry but clingy.

  4. Serve sprinkled with lettuce and shallots.
