  1. Warm Blue Cheese and Flank Steak Potato Salad

  2. 6 servings 2 lbs. red potatoes, boiled

  3. 1 cup sour cream

  4. 1 1/2 lbs. flank steak, grilled to desired doneness, sliced

  5. 8 oz. crumbled blue cheese

  6. 2 tbsp. fresh chives, chopped

  7. 2 tbsp. fresh red bell pepper, diced

  8. Steam potatoes until fork tender. For each serving, place five

  9. ounces of hot potatoes on dinner plate. Cover with a layer of sour

  10. cream; top with 3 ounces of flank steak slices. Top with blue

  11. cheese, chives, and red pepper.
