  1. 26 Chocolate sandwich cookies

  2. 1/3 cup 65g / 2 1/3oz Sugar

  3. 1/3 cup 65g / 2 1/3oz Butter or margarine - melted

  4. 2 cups 474ml Heavy cream

  5. 1 Sweetened condensed milk

  6. 1 teaspoon 5ml Vanilla extract

  7. 1 Cherry pie filling - (21oz)

  8. 1/2 cup 46g / 1.6oz Slivered almonds - coarsely

  9. 1/2 cup 118ml Miniature semi-sweet choc.

  1. In small bowl, combine cookie crumbs, sugar and butter; mix well. Press on bottom of a 9 x 13" baking pan. In a large mixing bowl, combine heavy cream, sweetened condensed milk and vanilla; mix well. Refrigerate, covered 30 minutes. Beat with an electric mixer on med. speed 2 to 3 minutes. or until soft peaks form. Do not over-beat. Gently fold in cherry filling, almonds and chocolate morsels.

  2. Spoon cherry mixture evenly over crumb crust. Cover, and freeze 6-8 hrs. or overnight.

  3. To serve, let stand at room temperature for 15 minutes. Cut into squares or bars. Garnish with additional cherry filling and mint leaves, if desired.
