  1. 2 tablespoons 30ml Vegetable oil

  2. 1 teaspoon 5ml Dried thyme - crumbled

  3. 1 teaspoon 5ml Salt

  4. 1/2 teaspoon 2 1/2ml Cayenne

  5. 2 cups 474ml Assorted nuts - walnuts, pecans,

  6. Hazelnuts, and natural almonds (with

  7. Skins)

  1. Preheat oven to 350 degrees.

  2. In a bowl whisk together oil, thyme, salt, and cayenne. Add nuts and toss to coat well. Spread nuts in a shallow baking pan and roast in middle of oven 10 minutes. Nuts may be made 3 days ahead and kept in an airtight container.

  3. Serve nuts warm or at room temperature.

  4. This recipe yields 2 cups.
