  1. 2 tablespoons 30ml Butter

  2. 1 1/2 cups 93g / 3 1/3oz Corn kernels, scraped fresh from cob

  3. 1 cup 62g / 2 1/5oz Flour

  4. 1 cup 62g / 2 1/5oz Cornmeal

  5. 4 tablespoons 60ml Sugar

  6. 1 tablespoon 15ml Baking powder

  7. 1/2 teaspoon 2 1/2ml Salt

  8. 2 Eggs

  9. 1 cup 237ml Milk

  10. 2/3 cup 157ml Oil

  1. Preheat oven to 425 degrees.

  2. In a small saute pan heat 1 teaspoon of butter, add corn kernels and cook for 2 minutes. In a mixing bowl combine flour, cornmeal, sugar, baking powder and salt. In another bowl, combine eggs, milk, oil, and corn kernels. Add to flour mixture and stir until just smooth.

  3. In an 8-inch cast-iron skillet melt remaining butter over medium heat. When butter begins to foam, pour in batter and place pan in oven. Bake for 20 to 25 miuntes until skewer inserted in center comes out clean.

  4. This recipe yields one 8-inch-round loaf.
