  1. 4 Whiting or red hake fillets - (6 to 8 oz ea)

  2. 6 Tomatoes - diced (medium)

  3. 8 Fresh basil leaves - (to 10) - chopped

  4. 4 Garlic cloves - minced

  5. 1/4 teaspoon 1 1/3ml Freshly-ground black pepper

  6. 1 teaspoon 5ml Salt

  7. 1/2 teaspoon 2 1/2ml Oregano

  8. 2 tablespoons 30ml Olive oil Crushed red pepper - to taste

  1. Recipe Instructions Heat olive oil. Saute minced garlic in oil until the garlic softens. Add tomatoes, basil, salt, pepper, oregano, and red pepper. Simmer for 5 to 7 minutes. Preheat oven to 350 degrees. Rinse hake fillets in cold water and pat dry. Arrange fillets in baking dish and pour tomato basil sauce over the fish. Bake until fish flakes easily, approximately 15 to 20 minutes. This recipe yields 4 servings.
