  1. Zeppoli with Anchovies

  2. Makes several dozen

  3. 7 cups flour, approximately

  4. 1 tbs dry yeast

  5. 1/8 tsp salt

  6. 3 cups warm water

  7. 3 small cans anchovies, each anchovy cut into 3 parts

  8. fat to fry

  9. Dissolve yeast in all the warm water in a large bowl.Let stand 5

  10. to 10 minutes. Add flour and salt gradually, adding enough flourfor a slightly sticky but manageable dough. Cover and let rise till

  11. double, about 1 hour.

  12. Punch down and pinch off pieces of the dough, with oiled fingers,

  13. about a 1 inch ball each piece. Insert a piece of anchoivy in the

  14. dough and seal. Drop into hot fat and fry golden on all sides.

  15. Serve warm.
