  5. 3 c Water

  6. 1 c Lentils

  7. 1 tb Olive oil

  8. 4 Cloves garlic, minced

  9. 1/2 c Chopped scallions,

  10. -including some green

  11. 1/2 c Chopped sweet green pepper

  12. 1/2 ts Crushed cumin seeds OR 3/8 ts Ground cumin

  13. 1 tb Chili powder

  14. 1 8-oz can tomato sauce

  15. 1 tb Red wine vinegar

  16. 1 tb Molasses

  17. In a large saucepan, bring the water and the lentils to a boil.

  18. Reduce the heat to medium-low, cover the pan, and simmer the lentils

  19. for 25-30 minutes or until the lentils are tender but not mushy. Do

  20. not overcook the lentils.

  21. While the lentils cook, in a medium-sized skillet, preferably one

  22. with a nonstick surface, heat the oil, add the garlic, scallions,

  23. green pepper, cumin, and chili powder, and saute the ingredients for 2 minutes or until the vegetables are tender-crisp. Stir in the

  24. tomato sauce, vinegar, and molasses, and simmer the mixture for 1

  25. minute.

  26. When the lentils are cooked, add the vegetable mixture to the

  27. lentils, and heat the mixture through before serving it.

  28. Note: serve over rice or with corn.
