  1. 2 tablespoons 30ml Finely minced shallots

  2. 1/3 cup 78ml Olive oil

  3. 1/2 cup 118ml Fresh lemon juice

  4. 3 tablespoons 45ml Honey - or to taste

  5. Salt - to taste

  6. Freshly ground black pepper - to taste

  1. Saute the shallots in the olive oil until soft but not brown. Set aside in a mixing bowl to cool. Whisk in the lemon juice, honey, and salt and pepper. Store refrigerated up to 2 weeks.

  2. This recipe yields 1 cup of vinaigrette.
