  1. 1 8-ounce package dried manicotti shells (14 shells)

  2. 8 ounces lean ground beef or bulk Italian sausage

  3. 1 cup chopped onion 8-ounce package cream cheese, softened

  4. 2 beaten eggs 10-ounce package frozen chopped spinach, thawed and well drained

  5. 1 1/2 cups soft bread crumbs (2 slices bread)

  6. 3/4 cup shredded mozzarella cheese (3 ounces)

  7. 2 1/2 cups Marinara Sauce or purchased spaghetti sauce or marinara sauce

  8. 2 tablespoons grated Parmesan cheese

  1. Method : Cook manicotti according to package directions. Drain well. Arrange manicotti in a single layer on a piece of greased foil; let stand until cool. Meanwhile, for filling, in a large skillet cook ground beef and onion until meat is brown and onion is tender. Drain off fat. Remove from heat. Stir softened cream cheese and eggs into meat mixture in skillet. Stir in drained spinach, bread crumbs, and mozzarella cheese. Preheat oven to 350F. Using a small spoon, spoon filling into manicotti shells. Arrange filled shells in a 3-quart rectangular baking dish. Pour Marinara Sauce over the filled shells. Sprinkle with Parmesan cheese. Bake about 30 minutes or until heated through.
