  6. 2 tablespoon(s) fresh mint leaves , torn

  2. Cut melon into 1/2-inch chunks. Arrange on large plate. Drizzle lime juice and extra virgin olive oil over melon, then sprinkle with salt. Scatter goat cheese and mint leaves over melon.
