  1. 1 T. oil

  2. 1 shallot , minced

  3. 3 garlic cloves, minced

  4. 10 oz. frozen chopped spinach , thawed

  5. 6 oz. can artichoke hearts

  6. 10 strips bacon , cooked and crumbled

  7. 1 t. lemon zest

  8. 2 c. sour cream

  9. 1 t. EACH salt and pepper

  1. Heat oil in skillet and sauteé shallot and garlic until tender and starting to brown. Remove from heat and set aside. Squeeze spinach dry and put in large mixing bowl. Add all other ingredients and mix well. Serve with tortilla chips. é
