  1. 1 onion, chopped fine

  2. 1 tablespoon oil

  3. 1 pound, pork kidneys

  4. 2 cups water

  5. 1 teaspoon sesame seed oil

  6. 1 teaspoon soy sauce

  7. 1 teaspoon lemon juice

  8. 20 rounds toast

  1. Wash the kidney well, remove the membranes, white veins and core and soak in water for one hour, changing the water once or twice.

  2. Place in a pan with 2 cups water, bring to a boil and boil for 5 minutes.

  3. Remove from the water and drain.

  4. Heat a pan with 1 tablespoon oil and when hot, saute the onion till it browns.

  5. Remove and drain well.

  6. Pass the kidney through a mincer and then mix with the onion.

  7. Mix the sesame seed oil, soy sauce and lemon juice, and add to the kidney.

  8. Spread on toast rounds.

  9. Serve hot.
