  1. 2 teaspoons 10ml Large seedless brinjals (medium)

  2. 1 teaspoon 5ml Onion finely chopped (large)

  3. 1 teaspoon 5ml Tomato grated (large)

  4. 1/2 teaspoon 2 1/2ml Ginger & garlic ground

  5. 1/2 Lemon

  6. 1 tablespoon 15ml Coriander chopped

  7. 1 teaspoon 5ml Red chilli powder

  8. 1/2 teaspoon 2 1/2ml Dhania - (coriander seed) powder

  9. 1/2 teaspoon 2 1/2ml Grated coconut

  10. 1/2 teaspoon 2 1/2ml Garam masala Salt to taste

  11. 3 tablespoons 45ml Oil

  1. Recipe Instructions Choose healthy firm brinjals. Hold over a direct flame with stalk. Turn and evenly burn till skin is charred. Repeat for other brinjal. Cool a bit. Hold under running water and gently scrape skin. Remove stalks, put brinjal in a large bowl. Mash well. Heat oil in a heavy saucepan. Add ginger garlic, stir. Add onions, stir fry till pink. Add tomatoes, all dry masalas, simmer till oil separates. Add lemon juice, coconut, brinjals, coriander and salt. Stir, simmer till oil separates again. Garnish with coriander, serve hot with parathas, etc.
