  1. 1-1/2 cups sour cream

  2. 1-1/2 cups salsa

  3. Vegetable cooking spray

  4. 6 cups cooked rice, divided

  5. 1 (15- to 16-ounce) can pinto beans or kidney beans, drained and rinsed

  6. 3 cups shredded cheddar cheese, divided

  7. 2 cups crushed tortilla chips

  1. Directions Preheat oven to 350 degrees. In medium bowl, combine sour cream and salsa; set aside. Lightly coat 13 x 9-inch baking dish with cooking spray. Layer bottom of dish with 3 cups rice. Layer 1-1/2 cups of sour cream mixture over rice. Layer 1-1/2 cups cheese over sour cream. Layer beans over cheese. Layer remaining rice over beans. Layer remaining sour cream over rice. Bake at 350 degrees for 15 minutes. Remove lasagna from oven. Combine remaining cheese with chips and sprinkle on top of lasagna. Return to oven and bake 5 minutes, or until cheese melts. Turn oven off and remove dish.
