  2. Sweet potatoes: 3 cups, chopped

  3. Chicken stock: 6 cups

  4. Leek: 3, chopped

  5. Fresh ginger: 1 tbsp

  6. Butter: 1 tbsp

  7. Salt

  1. Directions :

  2. Heat butter in a frying pan. Add sliced leeks to the pan and cook for a couple of minutes.

  3. Add sweet potatoes and chicken broth to the pan. Season with salt.

  4. Reduce heat to low. Cover and simmer for 1 hour. Stir occasionally until cooked.

  5. Let the soup cool for a while then process in a food processor until smooth.

  6. Garnish with fresh ginger before serving.
