  1. 9-inch 15 ounces ricotta cheese

  2. 8 ounces cream cheese

  3. 4 eggs -- lightly beaten

  4. 1/2 cup sugar

  5. 1/3 cup amaretto -- (di saronno preferable)

  6. 1 teaspoon vanilla

  7. 1/4 teaspoon salt

  1. Preparation : Pre-heat oven to 325 degrees. Beat together ricota and cream cheese until smooth. Add remaining ingredients; beat until smooth. Pour into pan. Bake 1 hour and 15 minutes or until firm in middle. Cool 20-30 minutes in pan before removing. Cool completely before serving. Make one 9-inch cheesecake.
