  1. 1 cup UNCLE BEN'S ORIGINAL BROWN RICE

  2. 2 tablespoons olive oil, divided

  3. 1 pound chicken tenders

  4. 4 cloves garlic, sliced

  5. 1 cup green beans

  6. 1 cup zucchini slices

  7. 1 cup sliced mushrooms

  8. 1 teaspoon fresh basil leaves, chopped or 1/2 teaspoon dried

  9. 3/4 teaspoon fresh thyme leaves

  10. 2 tomatoes, sliced into 8 pieces each

  1. Directions 1. Prepare Uncle Ben's Original Brown Rice according to package directions. Heat 1 tablespoon oil in large non-stick skillet. Add chicken and cook 2 to 3 minutes each side or until cooked through. Remove from skillet and set aside.

  2. Add remaining oil, garlic, green beans, and zucchini and cook for 2 to 3 minutes. Add mushrooms and herbs, and cook 2 minutes more. Add tomatoes and cook until through. Top ragout over chicken and serve with Uncle Ben's Original Brown Rice. Makes 4 servings.
