  1. 5lb bag Baking Potatoes

  2. 8 oz Sour Cream

  3. 1 cup Mayonnaise

  4. 1/2 cup Onion

  5. 1/2 cup Real Bacon Bits

  6. 1/2 cup Butter melted

  7. 1 (1oz) package Ranch Dressing Mix

  8. 1 1/2 cups Shredded Cheddar Cheese divided

  1. Scrub potatoes, pierce with a fork, wrap in plastic wrap and "bake" in the microwave for 10 minutes turn over and "bake" another 10 minutes (based on 5 potatoes in microwave). While potatoes "bake" dice and sweat onion in a small pan for 10 minutes or until tender. Remove from heat. Let potaotes cool. Preheat oven to 350 degrees. Unwrap and peel 1/2 of the potatoes (skin should slide right off). Dice potatoes into medium size pieces and place into a large bowl. Add 1 cup cheese, onion and bacon then toss gently. In a small bowl combine sour cream, mayonnaise, butter, and ranch dressing mix, stir. Mix dressing with potato mixture and toss gently to combine. Spoon into a 13x9 inch baking dish (sprayed with non-stick spray). Top with remaining 1/2 cup cheese. bake 45 minutes, or until hot and bubbly. Yield: serves 12 Notes: Used Duke's Mayonnaise and Oscar Mayer Real Bacon Bits.
