  1. 2 T oil (vegetable or olive)

  2. 3 lbs chicken (on the bone with skin)

  3. 1 med yellow onion , sliced

  4. 4 cloves garlic , minced

  5. 2 c water

  6. 2 c low-sodium soy sauce

  7. 2 c white vinegar

  8. 2 bay leaves

  1. In a large pot, brown the chicken pieces in the oil. Once browned, add the onion and garlic and saute for a few minutes. Add the water, soy sauce, and vinegar (equal parts of all until the chicken is covered with the cooking liquid). Add bay leaves and let simmer over medium heat for about an hour.
