    1. 4 6" flour tortillas

    2. 1 1/2 c Peaches; peeled, diced

    3. 1 1/2 c Strawberries; diced

    4. 2 tb Sugar

    5. 1 tb Crystallized ginger; finely

    6. chopped 1/2 ts Grated lime peel

    7. 4 oz Vanilla ice cream

    1. Preheat oven to 350~.

    2. Soften tortillas according to package directions.

    3. Press each one down in ungreased 10 oz custard cup.

    4. Bake 10-15 minutes or until crisp.

    5. Set aside to cool.

    6. Combine peaches, strawberries, sugar, ginger and lime peel; mix gently until well blended.

    7. To assemble, remove tortillas from custard cups.

    8. Place each tortilla shell on dessert plate and fill with 1 scoop of vanilla ice cream.

    9. Spoon equal portions of fruit salsa over top of ice cream.

    10. Garnish with mint sprigs if desired.
