  1. Berghoff Ragout

  3. 3/4 cup butter

  4. 3 1/2 pounds boneless round steak, cut into thin strips

  5. 1 cup onion, chopped

  6. 1 1/2 cups green bell pepper, chopped

  7. 1 pound mushrooms, sliced

  8. 1/2 cup unbleached flour

  9. 2 cups beef broth, canned/homemade

  10. 1 cup white wine, dry

  11. 1 teaspoon salt

  12. 1 teaspoon Worcestershire sauce

  13. tabasco sauce to taste

  14. Melt 1/2 cup butter in a large frypan. Brown meat over medium-high

  15. heat. Remove browned meat. In remaining butter, saute onion for 2 minutes. Add green bell pepper and mushrooms. Cook an additional

  16. 3 minutes. Melt

  17. 1/4 cup butter and add flour. Slowly add beef

  18. broth; cook until thickened. Stir in wine and seasonings. Add meat

  19. 45 minutes to

  20. 1 hour, until

  21. meat is tender. Serve with buttered noodles or dumplings.
