  1. 1 tbsp. butter

  2. 1 tbsp. 1 1/2 tsp. flour

  3. 1 c. skim milk

  4. 1/8 tsp. salt and paprika and powdered mustard

  5. Dash nutmeg

  6. 2 oz. Swiss cheese, shredded

  7. 2 c. cooked broccoli florets

  8. 1 c. cooked pearl onions

  9. 3/4 c. cooked macaroni shells

  1. In 2-quart saucepan heat butter until bubbly and hot. Add flour and cook over low heat, stirring constantly for 3 minutes. Remove pan from heat and using small whisk, gradually stir in milk and continue stirring until mixture is smooth.

  2. Add seasoning and cook over medium heat, stirring constantly until thickened. Reduce heat to low and cook 10 minutes longer, stirring occasionally. Add cheese and cook, stirring constantly until cheese is melted. Add vegetables and macaroni and cook, stirring gently until vegetable and shells are thoroughly cooked and heated. Serves 2.
