  1. 3 cups chicken breast, cooked & diced

  2. 1/2 cup celery

  3. 1/2 cup  mayonnaise

  4. 1/2 cup seedless grapes, cut in half or dried cherries

  5. 2 teaspoons lemon juice

  6. 1/4 teaspoon salt

  7. 1/8 teaspoon pepper

  8. 1 tablespoon of sweet yellow onion, finely diced

  9. 8 pieces whole wheat bread

  10. Romaine lettuce

  11. In a bowl, combine the chicken, celery, mayonnaise, grapes, lemon juice and onions. Mix well and season it with salt and pepper. Cover it and refrigerate for 1-2 hours.

  12. Heat the bread; spread 1/2 a cup of chicken salad onto it. Top with lettuce and another slice of bread. Cut it in half diagonally if desired.

  13. Serve with fries or chips.
