  1. 3 tablespoons butter

  2. 1 large onion chopped

  3. 1 stalk celery chopped

  4. 1 tablespoon flour

  5. 10 ounce package frozen whole kernel corn

  6. 1 cup heavy cream

  7. 2 cups half and half 2 tablespoons fresh parsley chopped

  8. Salt & Pepper to taste

  9. sprigs of fresh parsley for garnish

  1. In large saucepan over medium-high heat sauté in butter the onion and celery until tender; add flour and corn, sauté 4 minutes. Add the cream, half and half, parsley, salt and pepper.

  2. Purée in a blender or food processor then strain to remove hulls.(if desired) Spoon into bowls, garnish with fresh parsley and serve with chunky soft bread Yield: serves 4
