  1. 1 lb. large (31 to 35 per lb.) raw shrimp

  2. 1 Tbsp. canola oil

  3. 1 Tbsp. minced fresh ginger

  4. 3 cloves garlic , minced or pressed

  5. 3 Tbsp. ketchup

  6. 1 Tbsp. each cider vinegar , soy sauce and sugar

  7. 1/2 to 1 tsp. crushed red chilies

  8. 1/2 tsp. sesame oil

  9. 3 cups hot cooked rice or Crab Fried Rice

  10. Sliced green onion s

  1. Peel shrimp and remove tails. Place large skillet or wok over high heat. Add canola oil. When oil is hot, add shrimp, stir-frying until pink and opaque in center, about 2 minutes.

  2. With a slotted spoon, lift out shrimp, drain briefly, and set aside.

  3. To same pan, add ginger and garlic. Stir-fry about 30 seconds (do not burn garlic). Add ketchup, vinegar, soy sauce, sugar and chilies to taste. Stir until boiling. Add shrimp, any accumulated juices and sesame oil. Mix well. Mound rice on a platter. Top with shrimp mixture and onions. For more substantial meal, serve with Crab Fried Rice.
