  1. 1 Tbsp. plus 1 tsp. olive oil

  2. 1/2 cup red onion

  3. 2 cloves garlic, minced

  4. 1 green bell pepper

  5. 3/4 tsp. chili powder

  6. 1/4 tsp. ground cumin

  7. 1/8 tsp. cayenne pepper

  8. 1 lb. ground turkey

  9. 1 lb. tomatoes

  10. 1/8 tsp. chili pepper flakes, crushed

  11. 1/4 cup cilantro or parsley, chopped

  12. 1/8 tsp. salt

  13. 1/2 lb. ziti or other tube pasta

  14. 2 oz. Monterey Jack cheese, shredded

  1. Heat oil in a heavy nonstick skillet over medium heat. Sauté onion 4-5 minutes or until softened. Stir in next 5 ingredients and simmer 1 minute. Add turkey and increase heat to medium high. Sauté 5-6 minutes, stirring frequently to break up turkey, until turkey is lightly browned. Stir in next 4 ingredients and pepper to taste.

  2. Simmer 15 minutes or until sauce is thickened. Cook pasta in boiling water until al dente. Drain thoroughly. Pour sauce over pasta and sprinkle with cheese.
